Swap ham for pan-fried tofu sticks 1 cm thick, brushed with soy and sesame, and king oyster mushrooms shredded and seared until edges brown. Both lay flat and provide chewy protein without relying on imitation meat.

Double the vegetable variety when you drop egg: add pan-tossed seasoned beansprouts (brief blanch, sesame, salt) and braised burdock (ueong jorim) for sweet-earthy depth. Five textures cover the missing egg richness.

Keto-adjacent gimbap collapses the premise — the rice is the roll — but cauliflower 'rice' stir-fried with sesame oil offers a passable low-carb echo for picnics where nori is the point more than carb load. Keep expectations honest; it is not gimbap, it is gimbap-shaped.

Season rice thoughtfully when fillings are lighter. A pinch more salt and sesame prevents vegan gimbap from tasting underdone; squeeze fillings thoroughly so extra vegetables do not water the rice channel.

Label vegan rolls clearly for mixed boxes where classic rolls share space; set them at opposite ends and mark with a sesame-sprinkle code or wrapper color so no guest opens pork by surprise.
