Chamchi gimbap is tuna salad served as a roll: drain two 100g cans to near-dry (press in a sieve 5 minutes or you water the roll), then mix with 1.5 Tbsp mayo, pinch of pepper, and optionally 1 tsp kimchi juice or mustard for lift. It should mound not flow.

Rice gets extra sesame here because tuna is rich. Add half a teaspoon more sesame oil per 2 cups rice than classic, and layer rice a hair thinner so tuna does not squeeze out the ends during the slice — dense filling needs thinner bedding.

Textural counterpoint matters: add crisp pickled radish, cucumber julienne, and perilla leaf between rice and tuna to keep the center from feeling like a single tuna log. Without that crunch, bites turn monotone and heavy.

Make-ahead: pack chamchi gimbap separately from classic veg rolls for office lunches; tuna's oil and mayo soften gim faster. If boxing for 4 hours, keep chamchi rolls at the edge of the container and eat them first, veg rolls second.

Variations sip from the same logic: spicy tuna (add gochugaru and chili crisp), corn tuna (drained canned corn folded in), or kimchi-tuna where 60g chopped kimchi replaces half the tuna. Mayo is the emulsion, not the dish — adjust to your can's oiliness.
