Danmuji (yellow pickled radish) provides sweet-sour crunch and the most important texture contrast; shake off brine and pat dry so juice does not bleed into rice and stain neighboring fillings yellow by lunch.
Ham or imitation crab is protein and structure. Lightly pan-sear ham 60 seconds per side and blot oil; for crab sticks, air-dry 20 minutes then tear lengthwise into ribbons that lay flat instead of rolling as a rigid baton.
Spinach mirrors japchae method: blanch 30 seconds, shock, wring brutally dry, season with sesame and salt. Wet spinach is the number one gimbap ruiner — it waters the roll and makes gim chewy within an hour.
Carrot and fish cake add color and chew. Julienne carrots 2 mm, stir-fry 90 seconds with a pinch of salt to keep orange vivid; pan-fry sliced fish cake until edges curl. Both should be cooled to room temp before assembly so fillings do not steam gim.
Egg strips (jidan) tie it together. Fry a thin sheet, slice 1 cm ribbons, and lay as a single line — not a pile — so the roll cuts with a clean yellow seam rather than a collapsed egg flood.
