TL;DR

Bulgogi or sauteed beef plus cheese turns gimbap from snack to dinner — with a melted edge kids actually want.

Use bulgogi offcuts or shaved beef quickly marinated in 1 Tbsp soy, 1 tsp sugar, 1 tsp sesame, and pepper for 15 minutes; sear hard 60–90 seconds, cool, and chop loosely so slices do not pull in a single meat rope when cutting.

Cheese belongs as a thin blanket, not a block. Lay low-moisture mozzarella or processed cheese sliced thin along the protein line so each coin shows a yellow thread that melts slightly from residual rice heat — more cheese makes the roll greasy and harder to seal.

Balance richness with pickled radish and perilla plus a strip of kimchi blotted dry; without acid, beef-cheese gimbap eats heavy after 3 coins. The sour is the relief, not an extra.

Serve warm or room temp. Lightly pan-toast assembled gimbap seam-down 40 seconds to crisp seaweed and soften cheese for a grilled-sushi logic; serve immediately if toasted, as crisp gim re-softens under lid within minutes.

Price this as dinner: one roll (6 coins) plus miso or tteokguk side feeds one teen; two rolls plus kimchi and a boiled egg feed an adult — portion by appetite, not by roll count alone.
